All purpose flour (Maida)- 260 grams (2 cups)

   Baking soda – 1 tsp
   Baking powder – 1 1/2 tsp 
   Salt -1/2 tsp
   Cinnamon powder- 1 1/2 tsp
   Egg – 4
   Powdered sugar – 1 1/2 cup (300 grams)
   Vegetable oil – 1 cup ( any flavorless cooking oil)
   Vanilla extract – 2 tsp
   Walnuts chopped – 100 grams
   Finely grated carrot – 2 cups (go for the orange variety and chose the tiny ones rather than the large ones)

Preheat the #Microwave oven for 15 minutes at 180 degree C.
Mix all the dry ingredients – Flour, baking soda, baking powder, salt and cinnamon together. Sieve twice and keep it aside.
Beat the eggs well until frothy.
Add sugar bit by bit and beat till sugar dissolves.
Add vanilla essence.
Slowly add 1 cup of oil and beat it well.
Fold in the flour gently until well incorporated.
Mix the grated carrot and chopped walnuts.

Grease the baking tray and dust with flour. Add the slurry mixture till half the depth of the tray is filled.
Tap the tray gently couple of times to let out any trapped air bubbles.
Bake in the #Microwave Oven for 25-30 minutes at 180 degree C or until a toothpick inserted into the center of the cake comes out clean.
Wait for the cake to cool. Meanwhile bask in the heavenly aroma drifting through your home.
You can add a twist by icing it with fresh cream and blueberries. And don’t forget to serve it with loads of love 🙂
